Chef Nicolas Lambert’s creative interpretation of the éclair reflects his signature style, one that is playful, elegant, and indulgent, beautifully blending unexpected ingredients with delicate precision. Drawing inspiration from the season’s ripest moments, each éclair is a story of its own.

Cherry and Tonka Bean is a delicious balance of tart sun-ripened cherries with the subtle and earthy warmth of tonka bean. Pistachio, Kunafa & Chocolate is a nod to regional richness and a lusciously layered creation, whilst Peach & Verbena is as light and charming as a midsummer breeze.

Guests can elevate the éclair experience with a Cherry Breeze mocktail – a refreshing concoction thoughtfully crafted to complement the Cherry & Tonka Bean éclair. Bright, aromatic, and perfectly balanced, it mirrors the seasonal essence of the dessert in every sip.
